Chicken stuffed with kefalotyri cheese

Ingredients for 4 servings
  • 6 chicken legs
  • 12 slices of Prosciutto
  • 12 slices of Kefalotyri Gratsani
  • 3 fresh onions
  • Salt Pepper
  • A little thyme
  • 2 tablespoons of lemon juice
  • 2 cups chicken broth
  • 1 teaspoon of corn flour dissolved in some cold water


Remove the bones from the chicken with a knife (if you have not already asked your butcher to do so).
Cut each bit in the middle and tap carefully with a pestle to flatten the pieces.
Season each piece, place 1 slice prosciutto, a stick of kefalotyri, a piece of fresh onion and a little thyme and wrap in rolls, supporting it on a toothpick.
Bake in a pan by placing 1 cup of chicken broth for 45 minutes at 180 ° C.
Remove the fat from the fluids. Remove the toothpicks and serve after you "thicken" the sauce with the lemon juice and the cornflower.

* NOTE You can replace the prosciutto with a few slices of smoked turkey.
